Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 large egg
  • 0.75 cup milk
  • 1 tablespoon unsalted butter (melted)
  • 1 as needed butter or oil (for greasing)
  • 1 as desired jam or whipped cream (optional, for serving)

Directions

Step 1

In a medium-sized mixing bowl, sift together the all-purpose flour, baking powder, and salt. Stir in the granulated sugar.

Step 2

In a separate small bowl or jug, lightly whisk the egg. Add the milk and melted butter, and mix until combined.

Step 3

Make a well in the center of the dry ingredients. Gradually pour in the wet ingredients, stirring gently with a whisk or spatula until the batter is smooth and free of lumps. Do not overmix.

Step 4

Preheat a non-stick frying pan or griddle over medium heat. Lightly grease the pan with butter or oil.

Step 5

Using a tablespoon or small ladle, spoon 1-2 tablespoons of batter onto the pan for each pikelet. Space them apart as they will spread slightly.

Step 6

Cook for about 1-2 minutes, or until bubbles begin to appear on the surface and the bottom is golden brown. Flip the pikelets gently with a spatula and cook for another 1-2 minutes on the other side until golden and cooked through.

Step 7

Remove the cooked pikelets and place them on a plate. Repeat with the remaining batter, greasing the pan as needed.

Step 8

Serve the pikelets warm or at room temperature with jam, whipped cream, butter, or your favorite toppings.
