Ingredients

  • 12 pieces fresh oysters
  • 6 slices smoked bacon
  • 1 sheet puff pastry
  • 1 whole egg
  • 1 tablespoon water
  • 1 tablespoon butter
  • 2 cloves garlic cloves, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley, chopped
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Rinse and shuck the oysters, discarding the flat shell and keeping the deep half to collect any juices. Set oysters aside on a plate covered with a damp paper towel.

Step 3

Partially cook the smoked bacon by placing the slices in a skillet over medium heat for 3 minutes on each side, until they start to render fat but are still pliable. Remove and set aside on paper towels to drain.

Step 4

In the same skillet, melt the butter over low heat. Add the minced garlic and cook for 1 minute until fragrant. Stir in the lemon zest, parsley, salt, and black pepper. Remove from heat.
