Ingredients

  • 24 pieces cocktail sausages or smoked sausages
  • 2 sheets puff pastry sheets
  • 2 tablespoons all-purpose flour (for dusting)
  • 1 large egg
  • 1 tablespoon water
  • 1 cup ketchup
  • 1.5 teaspoons curry powder
  • 1 tablespoon honey
  • 1 teaspoon fresh lemon juice
  • 0.25 teaspoons salt

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.

Step 2

Lightly dust your work surface with flour. Roll out the puff pastry sheets to smooth and slightly elongate them if needed.

Step 3

Cut each sheet of puff pastry into 12 equal rectangles, making a total of 24 rectangles.

Step 4

Place one cocktail sausage at one end of a puff pastry rectangle, then roll the pastry around the sausage to wrap it, leaving the ends uncovered. Press the seam gently to seal.

Step 5

Place the wrapped sausages seam-side down on the prepared baking sheet, spacing them about an inch apart.

Step 6

In a small bowl, whisk together the egg and water to create an egg wash. Lightly brush the tops of the pastry with the egg wash to promote browning.

Step 7

Bake for 18-20 minutes, or until the pastry is golden brown and puffy. Remove from the oven and let cool slightly.

Step 8

While the pigs in a blanket are baking, prepare the curried ketchup. In a small bowl, combine the ketchup, curry powder, honey, lemon juice, and salt. Mix well until smooth.

Step 9

Transfer the curried ketchup to a serving bowl.

Step 10

Serve the pigs in a blanket warm with the curried ketchup on the side for dipping. Enjoy!
