Ingredients

  • 227 grams Almond paste
  • 150 grams Granulated sugar
  • 50 grams Powdered sugar
  • 2 units Large egg whites
  • 15 grams All-purpose flour
  • 1 pinch Salt
  • 200 grams Pine nuts

Directions

Step 1

Preheat your oven to 325°F (165°C) and line two baking sheets with parchment paper.

Break the almond paste into small pieces and place it in the bowl of a food processor. Add the granulated sugar and powdered sugar, and process until the mixture is fine and sandy.

Step 3

Add the egg whites, one at a time, to the almond-sugar mixture. Pulse the food processor until the mixture is smooth and paste-like. Scrape down the sides of the bowl as needed.

Add the all-purpose flour and a pinch of salt to the mixture, and mix until just combined.

Place the pine nuts in a shallow bowl or plate. Scoop out 1-tablespoon portions of the dough and roll them into balls using your hands. The dough will be sticky; dampen your hands with water to make rolling easier.

Roll each dough ball in the pine nuts, pressing gently to coat the surface fully. Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
