Ingredients

  • 2 lbs Pork shoulder (boneless)
  • 1 cup Barbecue sauce (your favorite brand or homemade)
  • 3 tbsp Dry rub (store-bought or homemade)*
  • 0.25 cup Apple cider vinegar
  • 0.5 cup Chicken stock
  • 2 cups Coleslaw mix
  • 0.5 cup Mayonnaise
  • 1 tbsp Apple cider vinegar (for coleslaw dressing)
  • 1 tsp Granulated sugar
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 4 pieces Burger buns (brioche or sesame seed)
  • 2 tbsp Unsalted butter (for toasting buns)
  • 4 slices Pickles (optional, for topping)

Directions

Step 1

Rub the pork shoulder thoroughly with the dry rub, ensuring it's evenly coated. Let it sit for at least 30 minutes or overnight for deeper flavor.

Step 2

Preheat your oven to 300°F (150°C) or set up a slow cooker on low heat.

Step 3

In a roasting pan or slow cooker, add apple cider vinegar and chicken stock. Place the seasoned pork shoulder in the pan or cooker.

Step 4

Cover with foil (if using an oven) or close the slow cooker lid. Cook for 5-6 hours, or until the pork is tender and easily pulls apart with a fork.

Step 5

Once the pork is cooked, transfer it to a large mixing bowl and shred using two forks. Stir in the barbecue sauce until the pork is evenly coated, then set aside.

Step 6

In a separate mixing bowl, combine mayonnaise, apple cider vinegar, granulated sugar, salt, and black pepper to make the coleslaw dressing.

Step 7

Toss the coleslaw mix in the dressing until fully coated. Let it chill in the refrigerator for at least 15 minutes.

Step 8

Butter the inside of each burger bun and toast them in a skillet or oven until golden brown.

Step 9

Assemble the sandwiches by adding a generous portion of pulled pork to the bottom bun, topping it with coleslaw, and adding optional pickles if desired. Place the top bun on, and secure with a toothpick if needed.

Step 10

Serve immediately with your favorite side dishes like fries or baked beans. Enjoy your Pig Sandwich just like at Hard Rock Cafe!
