  • 2 tbsp tomato paste
  • 6 cups chicken or beef stock
  • 1 tsp salt
  • 2 tbsp parsley (optional garnish)
  • 2 tbsp olive oil

Directions

Step 1

Clean the pig's feet thoroughly by rinsing under running water. Place them in a large bowl and soak them in water mixed with white vinegar for 30 minutes to remove any impurities. Rinse again and set aside.

Step 2

Peel and chop the onion, carrots, and celery into medium-sized pieces. Mince the garlic. Set the vegetables aside.

Step 3

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5 minutes until softened.

Add the minced garlic, paprika, and tomato paste to the pot and cook for 2 more minutes, stirring constantly to combine.
