Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 1 medium green bell pepper, finely chopped
  • 1 stalk celery, finely diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned, with juices)
  • 1 cup chicken stock
  • 1 leaf bay leaf
  • 0.5 teaspoons thyme, dried
  • 0.25 teaspoons cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Rinse the rice thoroughly under cold running water until the water runs clear. Set aside to drain.

Step 2

Heat the unsalted butter in a medium saucepan over medium heat. Add the finely chopped onion, green bell pepper, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables are softened but not browned.

Step 3

Add the minced garlic and stir for 1 minute, until fragrant.

Step 4

Stir in the diced tomatoes with their juices, chicken stock, bay leaf, thyme, cayenne pepper, salt, and black pepper. Bring the mixture to a simmer.

Step 5

Add the rinsed and drained rice to the saucepan, stirring to combine. Bring the mixture back to a gentle boil.

Step 6

Reduce the heat to low, cover the saucepan with a tight-fitting lid, and let it cook undisturbed for 18-20 minutes, or until the rice has absorbed the liquid and is tender.

Step 7

Turn off the heat but leave the lid on. Let the rice rest for 5 minutes to allow the flavors to meld.

Step 8

Remove the bay leaf, fluff the rice with a fork, and adjust seasoning if needed.

Step 9

Serve hot, garnished with fresh parsley if desired.
