Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 1 medium, diced green bell pepper
  • 2 minced garlic cloves
  • 14 ounces canned diced tomatoes
  • 2 tablespoons tomato paste
  • 2 cups chicken or vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup frozen peas
  • 2 tablespoons, chopped fresh cilantro
  • 1 optional (for garnish, cut into wedges) lime

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Set aside.

Step 2

In a large skillet or saucepan, heat the olive oil over medium heat.

Step 3

Add the diced onion and green bell pepper to the skillet. Sauté for 3-4 minutes until softened.

Step 4

Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.

Step 5

Add the rice to the skillet and toast it lightly for 2-3 minutes, stirring often.

Step 6

Stir in the diced tomatoes, tomato paste, and chicken or vegetable broth.

Step 7

Add the cumin, paprika, chili powder, salt, and black pepper. Stir well to combine all the flavors.

Step 8

Bring the mixture to a simmer, then reduce the heat to low and cover the skillet with a lid.

Step 9

Allow the rice to cook for 18-20 minutes, stirring occasionally to prevent it from sticking to the bottom.

Step 10

Once the rice is tender and the liquid has been absorbed, stir in the frozen peas and cook for another 2 minutes.

Step 11

Remove the skillet from the heat and sprinkle the chopped cilantro over the rice.

Step 12

Serve the Spanish rice hot, garnished with lime wedges if desired for added freshness.
