Ingredients

  • 12 pieces frozen potato and cheese pierogies
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 0.25 cup water
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 0.5 cup salsa
  • 2 tablespoons fresh cilantro, chopped (optional)

Directions

Step 1

Bring a large pot of water to a boil. Cook the frozen pierogies according to the package instructions, typically about 8-10 minutes. Drain and set aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper, cooking for about 3-4 minutes until softened.

Step 3

Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Cook until browned, about 6-7 minutes.

Step 4

Stir in the taco seasoning and water, mixing well. Cook for an additional 2 minutes until the beef mixture is evenly coated and slightly thickened. Remove the mixture from the skillet and set aside.

Step 5

In the same skillet, add a bit more olive oil if necessary, and pan-fry the cooked pierogies until golden brown on each side, about 2-3 minutes per side.

Step 6

Reduce the heat to low. Spread the beef mixture over the pierogies, then sprinkle the shredded cheddar cheese on top. Cover the skillet with a lid and allow the cheese to melt, about 2 minutes.

Step 7

Remove from heat and serve warm. Garnish each plate with a dollop of sour cream, a spoonful of salsa, and a sprinkle of fresh cilantro if desired.
