  • 12 ounces smoked sausage, sliced into rounds

  • 1 large red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 cups baby spinach
  • 1 cup shredded cheddar cheese
  • 0.5 cups sour cream (optional, for serving)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Step 2

Add the frozen pierogi to the skillet in a single layer. Cook for 3-4 minutes on each side, or until golden brown and slightly crispy. Remove the pierogi from the skillet and set aside.

Step 3

In the same skillet, add the remaining olive oil and butter. Stir in the smoked sausage slices and cook for 5-7 minutes, or until lightly browned. Remove the sausage from the skillet and set aside with the pierogi.
