Ingredients

  • 4 cups Frozen sweet cherries
  • 1 cup Granulated sugar
  • 0.25 cup Cornstarch
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 1 tablespoon Butter
  • 0.25 cup Water

Directions

Step 1

Place the frozen sweet cherries in a medium-sized saucepan. Add the water and cook over medium heat, stirring occasionally, until the cherries begin to release their juices, about 5 minutes.

Step 2

In a small bowl, whisk together the granulated sugar, cornstarch, and salt. Gradually add this mixture to the cherries, stirring constantly to prevent lumps from forming.

Step 3

Allow the mixture to come to a gentle boil and stir until it thickens, about 5-7 minutes. The filling should have a glossy appearance and coat the back of a spoon.

Step 4

Remove the saucepan from heat and stir in the lemon juice, vanilla extract, and butter until well combined.

Step 5

Let the pie filling cool to room temperature. If not using immediately, transfer to an airtight container and refrigerate for up to 3 days.

Step 6

Use the filling in your favorite pie crust, or as a topping for cheesecake, ice cream, or other desserts.
