Ingredients

  • 450 grams shrimp, peeled and deveined
  • 1 teaspoon salt
  • 2 whole lemon
  • 1 cup celery, finely diced
  • 1 medium red bell pepper, finely diced
  • 0.5 cup red onion, finely chopped
  • 0.5 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 tablespoons fresh dill, chopped
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon paprika
  • 4 cups mixed greens or lettuce

Directions

Step 1

Fill a medium-sized pot with water and add 1 teaspoon of salt and the juice of 1 lemon. Bring the water to a boil.

Step 2

Add the shrimp to the boiling water and cook for 2-3 minutes or until the shrimp turn pink and opaque. Remove the shrimp immediately and place them in a bowl of ice water to cool. Once cooled, drain and pat dry.
