  • 2 pounds Shrimp (large, peeled and deveined)

  • 1 Lemon (thinly sliced, seeds removed)
  • 1 Red onion (thinly sliced)
  • 4 Garlic cloves (smashed)
  • 2 Bay leaves
  • 4 Fresh dill (sprigs)
  • 1 tablespoon Whole black peppercorns
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Celery seeds
  • 0.5 teaspoons Cayenne pepper

Directions

Step 1

Bring 8 cups of water and 2 tablespoons of kosher salt to a boil in a large pot. Add the shrimp and cook for 2-3 minutes, just until they turn pink and curl. Drain immediately and transfer to a bowl of ice water to stop the cooking process. Once chilled, drain and pat the shrimp dry with a paper towel.
