Ingredients

  • 6 medium-sized fresh peaches or pears (firm-ripe)
  • 2 cups white vinegar
  • 1 cup water
  • 1.5 cups granulated sugar
  • 2 cinnamon sticks
  • 6 whole cloves
  • 2 star anise
  • 1 inch fresh ginger (sliced)
  • 0.5 teaspoons salt

Directions

Step 1

Wash and dry the peaches or pears. If using peaches, peel them (optional depending on preference). For pears, peeling is recommended. Cut the fruit into halves or quarters, removing the pits or cores.

Step 2

In a medium saucepan, combine white vinegar, water, granulated sugar, cinnamon sticks, whole cloves, star anise, sliced ginger, and salt.

Step 3

Bring the mixture to a gentle boil over medium heat, stirring until the sugar dissolves completely. Let the mixture simmer for 3-5 minutes to allow the spices to infuse the liquid.

Step 4

Add the prepared peaches or pears to the simmering brine. Let them cook for 2-3 minutes, just enough to slightly soften the fruit but keep its shape intact.

Step 5

Using a slotted spoon, carefully transfer the fruit into sterilized glass jars, packing them tightly but not squishing them.

Step 6

Pour the hot brine over the fruit in the jars, making sure the fruit is fully submerged and leaving about 1/2 inch of headspace at the top.

Step 7

Seal the jars with sterilized lids. Let the jars cool to room temperature before refrigerating.

Step 8

Allow the pickled peaches or pears to marinate for at least 24-48 hours for the flavors to develop fully. For best results, consume within 2 weeks.
