  • 1 small head red cabbage
  • 2 medium carrot
  • 1 medium red onion
  • 0.5 cup white vinegar
  • 0.5 cup water
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup fresh cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice

Directions

Step 1

Begin by peeling and thinly slicing the red onion. Place the onion slices in a medium bowl.

In a small saucepan over medium heat, combine the white vinegar, water, sugar, and salt. Stir until the sugar and salt are dissolved and the mixture is warm but not boiling.

Pour the warm vinegar mixture over the sliced onions. Let the onions sit and pickle for at least 15 minutes as you prepare the rest of the slaw.
