Ingredients

  • 1 pound fresh green beans
  • 1 cup water
  • 1 cup white vinegar
  • 1 tablespoon kosher salt
  • 1 teaspoon granulated sugar
  • 3 whole garlic cloves
  • 3 whole dill sprigs
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon mustard seeds

Directions

Step 1

Wash and trim the ends off the green beans so that they fit into pint-sized canning jars.

Step 2

Blanch the green beans by boiling them in a pot of water for 1 minute, then transferring them to an ice water bath to stop cooking. Drain and set aside.

Step 3

Sterilize two pint-sized canning jars by submerging them in boiling water, then carefully removing and drying them.

Step 4

In a saucepan, combine water, vinegar, kosher salt, and sugar. Heat over medium heat, stirring until the salt and sugar dissolve. Remove from heat and let the brine cool slightly.

Step 5

Divide the garlic cloves, dill sprigs, red pepper flakes, and mustard seeds evenly between the two jars.

Step 6

Pack the green beans tightly into the jars, standing them vertically.

Step 7

Pour the brine into the jars, ensuring that the beans are fully submerged but leaving about 1/2 inch of headspace at the top of the jars.

Step 8

Seal the jars with airtight lids and let them cool to room temperature. Once cooled, place the jars in the refrigerator.

Step 9

Allow the green beans to pickle for at least 24 hours before consuming. For best flavor, wait 2-3 days.

Step 10

Store the pickled green beans in the refrigerator for up to 2 months.
