Ingredients

  • 6 medium (approximately 4-6 inches each) Cucumbers
  • 2.5 cups White vinegar
  • 2 cups Water
  • 2 tablespoons Granulated sugar
  • 2 tablespoons Kosher salt
  • 6 sprigs Fresh dill
  • 4 whole, peeled Garlic cloves
  • 1 tablespoon Black peppercorns
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Red pepper flakes (optional)

Directions

Step 1

Wash the cucumbers thoroughly and pat them dry. Slice them into spears, coins, or leave them whole, depending on your preference.

Step 2

In a medium saucepan, combine the white vinegar, water, granulated sugar, and kosher salt. Bring the mixture to a boil over medium-high heat, stirring until the sugar and salt have dissolved completely. Remove the brine from heat and let it cool slightly.

Step 3

Prepare 2 pint-sized glass jars (or one large quart-sized jar) by ensuring they are clean and dry. Divide the fresh dill, garlic cloves, black peppercorns, mustard seeds, and red pepper flakes (if using) evenly between the jars.

Step 4

Pack the sliced cucumbers tightly into the jars, leaving a little room at the top for the brine to fully cover them.

Step 5

Carefully pour the warm brine into the jars, making sure all the cucumbers are submerged. If needed, gently tap the jars on the counter to release any air bubbles.

Step 6

Seal the jars tightly with their lids and allow them to cool to room temperature. Once cooled, transfer the jars to the refrigerator.

Step 7

Let the cucumbers pickle for at least 24 hours before eating to develop their full flavor. For best results, allow them to pickle for 3-5 days.
