Ingredients

  • 2 medium Carrots
  • 6 small Radishes
  • 1 cup White vinegar
  • 1 cup Water
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Kosher salt
  • 1 clove Garlic
  • 1 teaspoon Black peppercorns
  • 0.5 teaspoons Red pepper flakes (optional)

Directions

Step 1

Wash the carrots and radishes thoroughly. Peel the carrots and slice them into thin matchsticks or rounds. Slice the radishes into thin rounds.

Step 2

Peel and lightly crush the garlic clove with the side of a knife blade.

Step 3

In a small saucepan, combine white vinegar, water, granulated sugar, kosher salt, and black peppercorns. If desired, add red pepper flakes for extra spice.

Step 4

Heat the mixture over medium heat, stirring occasionally, until the sugar and salt are fully dissolved, about 4-5 minutes. Do not let the mixture boil.

Step 5

In a clean 16-ounce jar or airtight container, layer the sliced carrots and radishes. Add the crushed garlic clove between the layers for even flavor distribution.

Step 6

Carefully pour the hot pickling liquid over the vegetables, ensuring they are completely submerged.

Step 7

Let the mixture cool to room temperature, then seal the jar or container and refrigerate for at least 1 hour to allow the flavors to develop. For best results, refrigerate overnight.

Step 8

Serve the pickled carrot and radish as a side dish, a topping for tacos or salads, or enjoy them on their own!
