  • 1 medium onion, diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 cup diced tomatoes (canned, with juice)
  • 1 tablespoon red wine vinegar
  • 2 tablespoons fresh cilantro, chopped
  • 4 lime wedges (optional, for serving)

Directions

Step 1

Season the pork chops on both sides with salt, black pepper, smoked paprika, cumin, and garlic powder. Set aside.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear them for 3-4 minutes per side until golden brown. Remove the pork chops from the skillet and set aside.

In the same skillet, add the diced onion and chopped jalapeño. Sauté for 3-4 minutes until softened and fragrant.
