Ingredients

  • 2 pounds Fresh carrots
  • 1 cup Granulated sugar
  • 0.5 cup Unsalted butter
  • 3 tablespoons All-purpose flour
  • 1.5 teaspoons Baking powder
  • 2 teaspoons Vanilla extract
  • 3 large Eggs
  • 2 tablespoons Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish with butter or nonstick cooking spray.

Step 2

Peel the carrots and chop them into roughly 1-inch pieces for easier boiling.

Step 3

Bring a large pot of salted water to a boil. Add the carrots and cook until they are very tender, about 15-20 minutes.

Step 4

Drain the carrots and transfer them to a large mixing bowl. Use a potato masher or an immersion blender to puree the carrots until smooth.

Step 5

Add the granulated sugar, unsalted butter, all-purpose flour, baking powder, vanilla extract, and eggs to the pureed carrots. Mix everything well until fully combined and smooth.

Step 6

Pour the carrot mixture into the prepared baking dish, spreading it out evenly with a spatula.

Step 7

Bake in the preheated oven for 45-50 minutes, or until the soufflé is set and lightly golden on top.

Step 8

Remove from the oven and let it cool slightly. Optionally, dust the top with powdered sugar for a decorative touch before serving.

Step 9

Serve warm as a side dish or enjoy as a sweet treat. Leftovers can be refrigerated and reheated in the microwave.
