Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1 medium bell pepper, chopped (any color)
  • 1 cup tomato sauce
  • 1 cup diced tomatoes, canned
  • 2 medium Yukon gold potatoes, diced into small cubes
  • 0.25 cup raisins
  • 0.33 cup green olives, sliced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup water or beef broth
  • 2 tbsp fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Heat a large skillet or sauté pan over medium-high heat and add the olive oil.

Step 2

Add the diced onions and garlic to the hot oil and cook for 2-3 minutes until softened and fragrant.

Step 3

Stir in the chopped bell pepper and cook for another 2-3 minutes until they begin to soften.

Step 4

Add the ground beef to the skillet, breaking it up with a wooden spoon, and cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

Step 5

Stir in the diced tomatoes, tomato sauce, and spices (ground cumin, dried oregano, paprika, salt, and black pepper). Mix well to combine.

Step 6

Add the diced potatoes, raisins, green olives, and water or beef broth to the skillet. Stir gently to distribute the ingredients evenly.

Step 7

Reduce the heat to medium-low, cover the skillet with a lid, and simmer for 20-25 minutes, or until the potatoes are tender and cooked through. Stir occasionally to prevent sticking.

Step 8

Taste and adjust seasoning if needed. Add more salt or pepper to your preference.

Step 9

Serve the Picadillo hot with white rice, black beans, or tortillas. Garnish with freshly chopped cilantro if desired.
