Ingredients

  • 1 cup Creamy peanut butter
  • 0.5 cup Honey
  • 1.5 cups Rolled oats
  • 1 teaspoon Vanilla extract
  • 1 cup Dark chocolate chips
  • 1 tablespoon Coconut oil
  • 0 Optional toppings: shredded coconut, crushed nuts, or sprinkles

Directions

Step 1

In a mixing bowl, combine the creamy peanut butter, honey, rolled oats, and vanilla extract. Mix thoroughly until a dough-like consistency forms.

Step 2

Using your hands or a small cookie scoop, roll the mixture into 1-inch balls and place them onto a parchment-lined baking sheet.

Step 3

Put the peanut butter balls into the freezer to firm up for about 15 minutes.

Step 4

While the balls are chilling, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl. Heat in 20-second increments, stirring in between, until the chocolate is smooth and fully melted.

Step 5

Remove the peanut butter balls from the freezer. Using a fork or skewer, dip each ball into the melted chocolate, coating it evenly. Allow any excess chocolate to drip off before returning the ball to the parchment-lined sheet.

Step 6

If desired, sprinkle shredded coconut, crushed nuts, or sprinkles on top while the chocolate is still wet.

Step 7

Place the coated peanut butter balls back into the freezer for an additional 10 minutes, or until the chocolate has hardened.

Step 8

Serve immediately or store the peanut butter balls in an airtight container in the refrigerator for up to a week.
