Ingredients

  • 12 sheets phyllo dough sheets
  • 2 cups leeks (trimmed, cleaned, and finely sliced)
  • 0.5 cups unsalted butter (melted)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 4 ounces goat cheese (softened)
  • 2 ounces cream cheese (softened)
  • 1 tablespoon fresh dill (chopped)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.

Step 2

Heat the olive oil in a skillet over medium heat. Add the sliced leeks and sauté for 6-7 minutes until softened. Add the minced garlic and cook for another minute, stirring frequently. Remove from heat and let cool slightly.

Step 3

In a medium bowl, combine the cooled leek mixture, goat cheese, cream cheese, fresh dill, salt, and black pepper. Mix until well combined and set aside.

Step 4

Unroll the phyllo dough sheets and keep them covered with a damp kitchen towel to prevent drying out. Lay one sheet on a clean surface and brush lightly with melted butter. Stack a second sheet on top and brush with butter again. Using a sharp knife or a pizza cutter, slice the stack into 4 equal strips lengthwise.

Step 5

Place a teaspoon of the filling at one end of each strip. Fold the dough over the filling into a triangle shape, similar to folding a flag, and continue folding until the strip is completely wrapped. Repeat with the remaining strips and dough.

Step 6

Place the phyllo triangles on the prepared baking sheet, seam side down. Brush the tops with more melted butter.

Step 7

Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy. Serve warm or at room temperature.
