Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes, until softened.
Add the minced garlic to the skillet and cook for another minute until fragrant.
Stir in the chopped spinach and cook for 2-3 minutes, until wilted. Remove the skillet from heat and let the mixture cool slightly.
