  • 8 sheets Phyllo dough sheets
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 2 medium Yellow onion
  • 8 ounces Fresh goat cheese
  • 1 cup Sun-dried tomatoes
  • 2 cups Fresh arugula
  • 1 cup Parmesan cheese, grated
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Honey

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper.

In a small saucepan, melt the unsalted butter over low heat. Set aside.

Peel and thinly slice the yellow onions. Heat olive oil in a skillet over medium heat, add the onions, and sprinkle with 1/4 teaspoon salt. Cook, stirring occasionally, for 15-20 minutes until the onions are soft and caramelized. Set aside.
