Ingredients

  • 1 piece (approximately 6 oz) Boneless, skinless chicken breast
  • 1 teaspoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Paprika
  • 0.25 teaspoon Garlic powder
  • 0.5 cup Baby spinach
  • 2 tablespoons Feta cheese, crumbled
  • 2 sheets Phyllo dough sheets
  • 2 tablespoons Unsalted butter, melted

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Season the chicken breast with olive oil, salt, black pepper, paprika, and garlic powder. Rub the seasoning evenly over the chicken.

Step 3

Heat a non-stick skillet over medium heat and sear the chicken breast for 2-3 minutes on each side until lightly browned. The chicken does not need to be cooked through at this stage. Remove from the skillet and set aside to cool slightly.

While the chicken cools, lightly sauté the baby spinach in the same skillet for 1-2 minutes until just wilted. Set aside.
