Ingredients

  • 2 cups Whole wheat flour
  • 0.25 teaspoons Salt
  • 0.75 cups Water
  • 1 tablespoon Ghee or clarified butter

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour and salt.

Step 2

Gradually add water to the flour, using your hand to mix until it forms a soft dough. The dough should be pliable and slightly sticky.

Step 3

Knead the dough for about 8-10 minutes until it is smooth and elastic. Cover the dough with a damp cloth and let it rest for 15 minutes.

Step 4

Divide the dough into 8 equal portions and roll each portion into a ball.

Step 5

On a lightly floured surface, flatten one dough ball with your hand and then use a rolling pin to roll it out into a thin, circular disc approximately 6 inches in diameter.

Step 6

Heat a tawa or flat skillet on medium-high heat.

Step 7

Place the rolled phulka on the hot tawa. Cook for about 30-40 seconds, or until you see bubbles appearing on the surface.

Step 8

Flip the phulka and cook the other side for another 30 seconds.

Step 9

Now, using a pair of tongs, remove the phulka from the tawa and place it directly on the open flame of your stove. The phulka will puff up like a balloon.

Step 10

Once puffed, remove it from the flame and brush lightly with ghee or clarified butter.

Step 11

Repeat the process with the remaining dough balls.

Step 12

Serve hot with your choice of curry or vegetable dish.
