  • 2 cloves Garlic cloves, minced
  • 2 stalks Scallions, finely chopped
  • 1 teaspoon Pepper sauce (optional, for heat)
  • 1.25 cups Water
  • 4 cups Vegetable oil (for frying)

Directions

Step 1

In a large bowl, whisk together the split pea flour, all-purpose flour, baking powder, turmeric powder, ground cumin, and salt until evenly combined.

Step 2

Add the minced garlic, chopped scallions, and optional pepper sauce to the dry ingredients. Mix well.

Step 3

Gradually add the water, stirring continuously to create a thick, smooth batter. The consistency should be thick but pourable. Let the batter rest for 10 minutes.

In a large, deep pot or frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small dollop of batter into it—it should sizzle and rise to the surface immediately.
