Ingredients

  • 2 pounds Beef bones (marrow and knuckle bones)
  • 1 pound Beef brisket
  • 1 pound Beef sirloin, thinly sliced
  • 1 Onion, halved
  • 3 inches Fresh ginger, halved lengthwise
  • 2 Cinnamon sticks
  • 4 Star anise
  • 4 Cloves
  • 1 tablespoon Coriander seeds
  • 1.25 tablespoons Fish sauce
  • 1 ounce Rock sugar
  • 12 ounces Rice noodles (pho noodles)
  • 1 cup Fresh Thai basil
  • 0.5 cup Fresh cilantro, chopped
  • 0.5 cup Green onions, chopped
  • 2 cups Bean sprouts
  • 2 Lime, cut into wedges
  • 0.5 cup Hoisin sauce
  • 0.25 cup Sriracha sauce

Directions

Step 1

Place beef bones in a large pot and cover with cold water. Bring to a boil, then simmer for 10 minutes. Drain and rinse bones under cold water to remove impurities.

Step 2

Char the onion and ginger over an open flame or in the broiler until lightly blackened, about 5-7 minutes. Rinse to remove any burnt bits.

Step 3

In a large stockpot, combine rinsed beef bones, charred onion, charred ginger, cinnamon sticks, star anise, cloves, coriander seeds, fish sauce, rock sugar, and 14 cups of water.

Step 4

Bring the pot to a boil, then reduce heat to a gentle simmer. Skim off any foam or fat that rises to the surface. Let the broth simmer uncovered for 4-5 hours.

Step 5

After about 1.5 hours of simmering the broth, add the beef brisket to the pot. Simmer for 1.5 hours or until tender. Remove brisket, let it cool, and slice thinly against the grain.

Step 6

Strain the broth through a fine-mesh strainer to remove solids. Adjust seasoning with additional fish sauce or salt if needed. Keep the broth hot.

Step 7

Cook the rice noodles according to package instructions. Drain and divide noodles into serving bowls.

Step 8

Top each bowl with slices of cooked brisket, raw sirloin (thinly sliced), and pour hot broth over to cook the raw beef instantly.

Step 9

Serve with fresh Thai basil, cilantro, green onions, bean sprouts, lime wedges, hoisin sauce, and sriracha sauce on the side for customization.
