Ingredients

  • 1 lb Ribeye steak, thinly sliced
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 tbsp Unsalted butter
  • 1 large Yellow onion, thinly sliced
  • 1 medium Green bell pepper, thinly sliced
  • 8 slices Provolone cheese slices
  • 4 Hoagie rolls
  • 0.25 cup Mayonnaise (optional)
  • 0.25 cup Ketchup (optional)

Directions

Step 1

Place the ribeye steak in the freezer for 15-20 minutes before slicing; this will make it easier to slice thinly. Use a sharp knife to slice the ribeye into very thin strips.

Step 2

Season the sliced steak with the salt and black pepper. Set aside.

Step 3

Heat 1 tablespoon of olive oil and the butter in a large skillet or griddle over medium heat.

Step 4

Add the sliced onions and green bell peppers to the skillet. Sauté for 6-8 minutes, stirring frequently, until they are softened and slightly caramelized. Remove the vegetables from the skillet and set aside.

Step 5

Add the remaining 1 tablespoon of olive oil to the skillet. Increase the heat slightly to medium-high and add the sliced steak. Cook for 3-4 minutes, stirring occasionally, until the steak is browned and cooked through.

Step 6

Once the steak is cooked, return the sautéed onions and bell peppers to the skillet. Mix everything together and cook for 1-2 minutes to combine the flavors.

Step 7

Separate the steak and vegetable mixture into four equal portions in the skillet. Lay two slices of provolone cheese over each portion and allow the cheese to melt, about 1 minute.

Step 8

Cut the hoagie rolls open lengthwise, being careful not to split them completely. If desired, lightly toast the rolls in a separate pan or in the oven for added texture.

Step 9

Optionally spread a layer of mayonnaise or ketchup on the inside of each hoagie roll.

Step 10
