Place the ribeye steak in the freezer for 20-30 minutes to firm up slightly. This makes it easier to slice thinly.
While the steak is chilling, slice the red bell pepper, green bell pepper, and yellow onion into thin strips.
Remove the steak from the freezer and use a sharp knife to thinly slice it against the grain into small strips.
