Ingredients

  • 12 ounces ribeye steak, thinly sliced
  • 2 tablespoons olive oil
  • 1 red bell pepper, julienned
  • 1 green bell pepper, julienned
  • 1 yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 jalapeño, finely diced
  • 0.5 teaspoons cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 4 slices provolone cheese slices
  • 4 large flour tortillas
  • 0.25 cup sriracha mayonnaise (optional)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the thinly sliced ribeye steak and cook for 2-3 minutes until browned. Remove the steak from the skillet and set aside.

Step 2

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the red and green bell peppers, yellow onion, garlic, and jalapeño. Sauté for 5-7 minutes until the vegetables are tender.
