Ingredients

  • 2 English cucumber
  • 1 teaspoon Salt
  • 1 tablespoon Fresh ginger
  • 2 Garlic cloves
  • 2 tablespoons Soy sauce
  • 1.5 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 teaspoon Sugar
  • 0.5 teaspoon Red pepper flakes
  • 1 teaspoon Sesame seeds
  • 1 Scallion

Directions

Step 1

Wash the English cucumbers and cut off both ends. Use a peeler if desired to create stripes of peeled and unpeeled sections for presentation.

Step 2

Slice the cucumbers lengthwise into quarters and remove the seeds using a small spoon. Chop the cucumbers into bite-sized pieces.

Step 3

Place the cucumber pieces in a bowl and sprinkle with 1 teaspoon of salt. Mix well and let them sit for 10 minutes to draw out excess water.

While the cucumbers are resting, peel and grate 1 tablespoon of fresh ginger. Mince 2 garlic cloves finely.
