Place the ribeye steak in the freezer for 20-30 minutes to firm up slightly. This will make it easier to slice thinly.
While the steak firms up, peel and thinly slice the yellow onion.
In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter over medium heat. Add the sliced onions and cook, stirring occasionally, for 10-12 minutes or until they are soft and golden brown. Remove the onions from the skillet and set aside.
