Ingredients

  • 1 pound ribeye steak
  • 1 whole green bell pepper
  • 1 medium yellow onion
  • 8 pieces provolone cheese slices
  • 4 whole hoagie rolls
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Place the ribeye steak in the freezer for 20-30 minutes to make slicing easier.

Step 2

While the steak chills, slice the green bell pepper into thin strips and the onion into thin slices.

Step 3

Once the steak is slightly firm but not frozen, thinly slice it into very small strips or shave it using a sharp knife.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the bell pepper and onion, and sauté until tender and slightly caramelized, about 6-8 minutes. Remove from skillet and set aside.

Step 5

In the same skillet, add the remaining olive oil and butter. Heat over medium-high, then add the sliced steak.

Step 6

Season the steak with salt and black pepper and cook while stirring, until browned and fully cooked, about 4-5 minutes.

Step 7

Reduce the heat to low and return the sautéed peppers and onions to the skillet. Stir until evenly mixed with the steak.

Lay the provolone cheese slices over the top of the meat and vegetable mixture. Cover the skillet with a lid and allow the cheese to melt, about 1-2 minutes.

Step 9

Slice the hoagie rolls lengthwise, but don’t cut all the way through to keep the structure intact. Lightly toast them if desired.

Step 10

Spoon the cheesy steak mixture into the hoagie rolls and serve immediately while hot.
