Ingredients

  • 1 cup short-grain rice
  • 2 cups water
  • 4 cups whole milk
  • 1 cup heavy cream
  • 0.75 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup raisins (optional)
  • 1 tablespoon butter

Directions

Step 1

Rinse the short-grain rice under cold water until the water runs clear, then drain well.

Step 2

In a medium saucepan, bring the water to a boil. Add the rice, reduce the heat to low, cover, and simmer for 10 minutes or until the water is absorbed.

Step 3

Stir in the whole milk, heavy cream, sugar, salt, and butter. Cook over medium heat, stirring frequently to prevent the rice from sticking to the bottom, until the mixture begins to thicken. This should take about 20-25 minutes.

Step 4

Once thickened, lower the heat and cook for another 10-15 minutes, stirring occasionally, until the rice is tender and the pudding reaches your desired consistency. If using raisins, stir them in during the last 5 minutes of cooking.

Step 5

Remove the pudding from the heat and stir in the vanilla extract and ground cinnamon. Taste and adjust sweetness, if needed.

Step 6

Let the pudding cool slightly before serving. Serve warm, at room temperature, or chilled, depending on your preference.

Step 7

Optionally, garnish with an extra sprinkle of cinnamon or a dollop of whipped cream before serving.
