Ingredients

  • 2 lbs Ground pork
  • 2 tsp Fennel seeds
  • 1.5 tsp Paprika
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Red pepper flakes
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Dried parsley
  • 1 tsp Garlic powder
  • 0.5 tsp Onion powder
  • 0.5 tsp Sugar
  • 2 tbsp White wine or water

Directions

Step 1

In a large mixing bowl, add the ground pork and break it apart with your hands or a large spoon.

Step 2

Add fennel seeds, paprika, salt, black pepper, red pepper flakes, dried oregano, dried basil, dried parsley, garlic powder, onion powder, and sugar to the bowl.

Step 3

Pour in the white wine or water. This helps to bind the ingredients together and adds moisture to the sausage mixture.

Step 4

Using clean hands, mix all the ingredients together until evenly combined. Be sure to incorporate the spices thoroughly so the flavor is distributed throughout the meat.

Step 5

Optional: Cover the mixture and let it rest in the refrigerator for at least 1 hour to allow the spices to meld with the meat.

Step 6

Shape the sausage mixture into patties, links, or leave it as a bulk sausage mix, depending on your preference and intended use.

Step 7

If desired, cook immediately by frying in a skillet over medium-high heat until the internal temperature reaches 160°F (71°C), or refrigerate the uncooked sausage mixture in an airtight container for up to 2 days.

Step 8

To store longer, divide the sausage mixture into portions, wrap tightly, and freeze for up to 3 months.
