Place the beef steak in the freezer for 1-2 hours to partially freeze it. This will make it easier to slice thinly.
Once chilled, use a sharp knife to slice the beef against the grain into thin strips, about 1/8 to 1/4 inch thick.
In a large mixing bowl, combine soy sauce, Worcestershire sauce, brown sugar, liquid smoke, black pepper, garlic powder, onion powder, paprika, and crushed red pepper flakes (if using). Whisk together until the sugar is dissolved and all ingredients are well mixed.
Add the beef strips to the marinade and toss to ensure all pieces are evenly coated. Cover and refrigerate the beef for 12–24 hours, allowing it to soak up the flavors.
After marinating, preheat your oven to 175°F (or the lowest setting your oven allows). Line baking sheets with foil and place wire racks on top.
Remove the beef strips from the marinade, letting excess liquid drip off. Pat the strips dry with paper towels to ensure even drying in the oven.
Arrange the beef strips in a single layer on the prepared wire racks, leaving space between the pieces for air circulation.
Place the baking sheets in the oven and prop the oven door slightly open with a wooden spoon to allow moisture to escape.
Dry the beef strips for 4–6 hours, flipping them halfway through the process. Check for doneness by testing a piece: it should be dry to the touch and bend without breaking.
Once done, remove the jerky from the oven and let it cool completely. Store in an airtight container or resealable bag at room temperature for up to 1 week or in the refrigerator for up to 1 month.
