Ingredients

  • 4 cups (chopped) fresh broccoli crowns
  • 0.5 medium-sized (diced) red onion
  • 6 slices (cooked and crumbled) bacon
  • 1 cup (shredded) sharp cheddar cheese
  • 0.5 cup sunflower seeds
  • 0.5 cup raisins or dried cranberries
  • 0.75 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons granulated sugar
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and let cool on a paper towel-lined plate. Once cooled, crumble into small pieces and set aside.

Step 2

Wash and thoroughly dry the broccoli crowns. Chop them into small, bite-sized florets and place in a large mixing bowl.

Step 3

Add the diced red onion, shredded cheddar cheese, sunflower seeds, dried raisins or cranberries, and crumbled bacon to the bowl with the broccoli.

Step 4

In a small mixing bowl, whisk together the mayonnaise, apple cider vinegar, granulated sugar, salt, and black pepper to make the dressing.

Step 5

Pour the dressing over the broccoli mixture and toss until everything is evenly coated.

Step 6

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.

Step 7

Before serving, give the salad one final toss to redistribute the dressing. Serve chilled and enjoy!
