Wash and pit the plums. Cut them into quarters.
Place the plums in a large, heavy-bottomed pot and add sugar, cinnamon, and cloves. Stir well to combine.
Cover the pot with a lid and let the plums macerate for about 1 hour at room temperature. This will help the sugar dissolve and draw out the juices from the plums.
After 1 hour, place the pot over medium heat. Bring the mixture to a gentle boil, stirring occasionally to prevent sticking.
Once the mixture starts boiling, reduce the heat to low and simmer uncovered for 3 to 4 hours, stirring occasionally. The plums should become very soft and most of the liquid should evaporate.
Use an immersion blender to blend the mixture into a smooth consistency. Alternatively, you can cool the mixture slightly and blend it in batches using a countertop blender.
Add the vanilla extract and lemon juice and stir well to combine.
Continue to simmer the mixture for an additional 30 minutes or until it thickens to a butter-like consistency. It should become thick enough to hold its shape when a spoon is dragged through it.
Taste and adjust sweetness or spices if needed.
Once the Pflaumenmus has reached the desired consistency, transfer it into sterilized jars while hot. Seal the jars immediately and allow them to cool at room temperature.
Store the Pflaumenmus in a cool, dark place. Refrigerate after opening.
