Ingredients

  • 300 g All-purpose flour
  • 100 g Granulated sugar
  • 150 g Butter
  • 2 Eggs
  • 4 tbsp Milk
  • 2 tsp Baking powder
  • 1 tsp Vanilla extract
  • 0.25 tsp Salt
  • 800 g Fresh plums
  • 0.5 tsp Cinnamon
  • 2 tbsp Powdered sugar (optional for garnish)

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 9-inch springform pan or line it with parchment paper.

Step 2

Wash the fresh plums, cut them in half, and remove the pits. Slice each half into quarters and set aside.

Step 3

In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.

Step 4

Cut the butter into small cubes and add it to the dry ingredients. Use your fingers or a pastry cutter to incorporate the butter into the mixture until it resembles coarse crumbs.

Step 5

In a separate bowl, beat the eggs, then whisk in the milk and vanilla extract.

Step 6

Pour the wet ingredients into the dry mixture. Mix gently until just combined, forming a soft, sticky dough.

Step 7

Transfer the dough to the prepared springform pan. Use a spatula or your hands to spread it evenly over the bottom of the pan.

Step 8

Arrange the plum slices in concentric circles over the dough, starting from the outer edge and working toward the center. Slightly overlap the slices for a decorative effect.

Step 9

Sprinkle the cinnamon evenly over the plums.

Step 10

Bake in the preheated oven for 35–40 minutes, or until the edges are golden brown and the plums are bubbly. A toothpick inserted into the dough should come out clean.

Step 11

Remove the cake from the oven and cool in the pan for 10 minutes. Then release the springform sides and let the cake cool completely on a wire rack.

Step 12

If desired, sprinkle powdered sugar over the cooled cake before serving.

Step 13

Serve at room temperature or slightly warm, perhaps with a dollop of whipped cream or vanilla ice cream.
