Ingredients

  • 1 lb Large shrimp, peeled and deveined
  • 0.5 cup Cornstarch
  • 2 Egg whites
  • 2 cups Vegetable oil
  • 0.5 cup Walnut halves
  • 0.5 cup Sugar
  • 0.5 cup Water
  • 2 tbsp Mayonnaise
  • 1 tbsp Honey
  • 1 tbsp Condensed milk
  • 1 tsp Fresh lemon juice
  • 2 tbsp Chopped green onions (garnish)

Directions

Step 1

Prepare the candied walnuts: In a small saucepan, combine the sugar and water and bring to a boil over medium heat. Stir until the sugar is dissolved. Add the walnut halves and let them simmer for 2-3 minutes. Remove the walnuts with a slotted spoon and place them on a baking sheet lined with parchment paper to cool and dry.

Step 2

In a medium bowl, whisk the egg whites until they are frothy. Place the cornstarch in a shallow dish.

Step 3

Dip each shrimp into the egg whites, then coat with cornstarch, shaking off any excess.

Step 4

Heat the vegetable oil in a large skillet or wok over medium-high heat. When the oil is hot, carefully fry the shrimp in batches until golden and crispy, about 2-3 minutes per side. Remove the cooked shrimp with a slotted spoon and drain on paper towels.

Step 5

In a small mixing bowl, whisk together the mayonnaise, honey, condensed milk, and lemon juice to create the honey sauce.

Step 6

Toss the fried shrimp in the honey sauce until evenly coated.

Step 7

Transfer the coated shrimp to a serving platter and sprinkle with the candied walnuts and chopped green onions for garnish.

Step 8

Serve immediately and enjoy!
