Ingredients

  • 1 sheet pre-made puff pastry
  • 3 large yellow onions
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme
  • 150 grams brie cheese
  • 1 large egg
  • 2 tablespoons heavy cream
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and thinly slice the onions.

Step 3

In a large skillet, melt the butter and olive oil over medium heat.

Step 4

Add the onions to the skillet and cook, stirring occasionally, for 15-20 minutes until they are soft and caramelized. Sprinkle with salt, pepper, and thyme during the last few minutes of cooking.

Step 5

Roll out the puff pastry sheet onto a parchment-lined baking sheet.

Step 6

Spread the caramelized onions evenly over the puff pastry, leaving a 1-inch border around the edges.

Step 7

Slice the brie cheese into thin pieces and arrange them on top of the onions.

Step 8

In a small bowl, whisk together the egg and heavy cream to create an egg wash.

Step 9

Brush the edges of the puff pastry with the egg wash.

Step 10

Bake the tart in the preheated oven for 25-30 minutes, or until the pastry is golden brown and flaky.

Step 11

Remove from the oven and allow to cool slightly before cutting into slices and serving.
