Ingredients

  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups sharp cheddar cheese (grated)
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon paprika (optional, for garnish)

Directions

Step 1

In a medium saucepan, melt the unsalted butter over medium heat.

Step 2

Once the butter is fully melted, add the all-purpose flour and whisk constantly for about 1-2 minutes to create a smooth roux. This will help remove the raw flour taste.

Step 3

Gradually pour in the whole milk, about 1/4 cup at a time, whisking continuously to avoid lumps. Continue whisking until the mixture is smooth and begins to thicken, about 3-4 minutes.

Step 4

Reduce the heat to low and stir in the grated sharp cheddar cheese in small handfuls, allowing each addition to fully melt before adding the next.

Step 5

Once the cheese is fully incorporated, stir in the Dijon mustard, garlic powder, salt, and black pepper. Taste and adjust seasoning as needed.

Step 6

For an optional touch of color and flavor, sprinkle paprika on top before serving.

Step 7

Remove from heat and serve immediately. The cheese sauce works great over vegetables, pasta, baked potatoes, or as a dip for nachos.
