Ingredients

  • 2 pieces (6 oz each) Tuna steaks
  • 4 tablespoons Basil pesto (store-bought or homemade)
  • 2 tablespoons Olive oil
  • 2 teaspoons Lemon juice
  • 2 pieces Garlic cloves
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 cup (halved) Cherry tomatoes
  • 2 cups Arugula

Directions

Step 1

Pat the tuna steaks dry with a paper towel and rub them with 1 tablespoon of olive oil, salt, and black pepper on both sides. Let rest for 5 minutes while you prepare other ingredients.

Step 2

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the tuna steaks to the pan.

Step 3

Sear the tuna steaks for 2-3 minutes on each side for a medium-rare finish, or adjust cooking time based on your preferred level of doneness. Remove the tuna from the skillet and let rest on a plate.

In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant. Then, add the cherry tomatoes and cook for 2-3 minutes, allowing them to soften slightly.

Stir in the lemon juice and 2 tablespoons of pesto, mixing everything well. Cook for 1 more minute, then remove from heat.

To serve, place a bed of arugula on each plate. Top with the cooked tuna steak and spoon the tomato-pesto mixture over the fish.
