Ingredients

  • 6 pieces boneless, skinless chicken thighs
  • 2 cups fresh basil leaves
  • 1 cup parmesan cheese, grated
  • 0.333 cup pine nuts
  • 2 whole garlic cloves
  • 0.5 cup extra-virgin olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 12 pieces toothpicks

Directions

Step 1

Preheat the oven to 375°F (190°C).

Prepare the pesto by combining basil leaves, parmesan cheese, pine nuts, garlic cloves, olive oil, salt, and black pepper in a food processor or blender. Blend until smooth.

Lay the chicken thighs flat on a cutting board. Spread approximately 1 to 2 tablespoons of pesto onto one side of each thigh.
