Ingredients

  • 1.5 pounds Baby potatoes
  • 2 teaspoons Salt
  • 3 tablespoons Olive oil
  • 0.5 cups Pesto (store-bought or homemade)
  • 0.25 cups Parmesan cheese (grated, optional)
  • 1 teaspoon Black pepper
  • 2 tablespoons Fresh basil leaves (for garnish, optional)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or foil.

Step 2

Place the baby potatoes in a large pot and cover them with cold water. Add 2 teaspoons of salt and bring the water to a boil over high heat.

Step 3

Reduce the heat to medium and simmer the potatoes for 15-20 minutes, or until they are fork-tender. Drain the potatoes and let them cool slightly.
