Ingredients

  • 12 oz spaghetti
  • 1 cup pesto sauce
  • 1 large yellow onion
  • 4 slices prosciutto
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 0.5 cup Parmesan cheese
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 2 tbsp fresh basil (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the spaghetti and set aside.

Step 2

While the pasta cooks, peel and thinly slice the yellow onion. Mince the garlic cloves.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onion and a pinch of salt. Cook, stirring occasionally, for about 10-12 minutes, or until the onions are golden and caramelized. Remove the onions from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Tear the prosciutto into smaller pieces and cook for 2-3 minutes until crispy. Remove from the skillet and place on a paper towel-lined plate.

Step 5

Reduce the heat to low and add the minced garlic to the skillet. Sauté for 1 minute until fragrant, being careful not to burn it.

Step 6

Stir in the pesto sauce and 1/4 cup of the reserved pasta water to the skillet. Mix well, creating a smooth sauce. Add more pasta water, 1 tablespoon at a time, to reach your desired consistency.

Step 7

Add the cooked spaghetti and caramelized onions to the skillet. Toss to coat the pasta evenly in the pesto sauce. Season with black pepper and red pepper flakes, if desired.

Step 8

Plate the pasta and top with crispy prosciutto pieces. Sprinkle with grated Parmesan cheese and garnish with fresh basil, if desired.
