Ingredients

  • 400 grams spaghetti
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 120 grams basil pesto
  • 50 grams grated Parmesan cheese
  • 10 leaves fresh basil leaves
  • 100 grams cherry tomatoes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

While the spaghetti is cooking, season the chicken breasts with salt, black pepper, and garlic powder on both sides.

Step 3

Heat a large skillet over medium heat and add the olive oil. Once the oil is hot, add the chicken breasts. Cook for 5-7 minutes per side, or until fully cooked through with an internal temperature of 165°F (75°C). Remove the chicken from the skillet and let it rest for 5 minutes before slicing into thin strips.

In the same skillet, reduce the heat to low and add the basil pesto. Stir it gently to warm it up, then add the reserved pasta water a little at a time until the sauce reaches your desired consistency.
