Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the shredded chicken, basil pesto, mozzarella cheese, salt, and pepper. Mix until the ingredients are evenly coated.
Lightly dust a clean surface with flour. Roll out the thawed puff pastry sheets to smooth them out. Cut each sheet into 6 equal squares (for a total of 12).
Spoon about 2 tablespoons of the chicken-pesto mixture onto the center of each pastry square.
Fold each square diagonally to form a triangle. Press the edges firmly with a fork to seal. Make small slits on top of each pasty to allow steam to escape during baking.
Transfer the sealed pasties to the prepared baking sheet. Brush the tops with the beaten egg for a golden finish.
Bake in the preheated oven for 20–25 minutes, or until the puff pastry is golden brown and puffed up.
Remove the pasties from the oven and let them cool for 5 minutes. Serve warm and enjoy!
